Concept

SingleThread is a source-focused, farm-driven restaurant and inn that offers its diners and guests time-honored preparations of seasonally inspired cuisine, and a uniquely curated taste of Sonoma Wine Country. The concept was born out of Kyle and Katina Connaughton’s Southern California upbringing, as well as their extensive international travels and experiences living and cooking abroad in both the UK and Japan.

SingleThread is a three Michelin-starred restaurant whose foundation is rooted in a wealth of Japanese principles and traditions surrounding hospitality, food culture, and service. SingleThread combines the art of sustainable agriculture with culinary excellence, fully integrating the farm into its hospitality spaces, and bringing food sources into the forefront. For SingleThread, the relationship between farmer and chef is more than a side story; it is the heart of the experience. Having lived for many years in Japan, the Connaughton’s have incorporated Japanese touches into SingleThread. Some offerings include artisanal products, handmade custom dishes and donabe from eighth-generation master potters of Iga.

SingleThread focuses on the concept of “omotenashi,” described as a heightened sense of hospitality and anticipation of a guest’s every need. In October 2020, The Michelin Guide honored SingleThread with a Green Star, its first year of awarding restaurants in the United States for their efforts on sustainability. In June 2021, the wine program received the Grand Award from the Wine Spectator. And last October, SingleThread was named #37 at the World’s 50 Best Restaurant Awards. SingleThread is a member of Relais & Chateaux, an international association of independent luxury hotels and restaurants around the world.

Chef

Kyle Connaughton was always clear about his mission: “We wanted to give our guests the feeling that they’re coming to a dinner party in our home instead of a restaurant. At SingleThread, we have a style that’s all our own. We are not a Japanese restaurant, but are heavily influenced by our Japanese style; we are a California restaurant.”

Chef Kyle is particularly excited to share SingleThread’s unique style of hospitality as Dri Roberts, the restaurant’s Service Director will be running the dining room. Executive Sous Chef Andrew Hori will bring his culinary experience to the open kitchen where all of the chefs’ work will be on display. Under the guidance of Wine Director Rusty Rustello, the beverage programme for SingleThread has been attentively planned with Singapore’s leading wine bar, Park90, to curate an extensive wine pairing list. The wines have been specially handpicked to showcase highly allocated Sonoma Coast wines such as Kistler, Rhys, Occidental, Lioco, Jolie-Laide and others to complement the dishes that will be served by SingleThread during the residency. SingleThread’s guiding principles include: be rational, focus on quality, enhance the senses, and develop close ties to the vintners.

Restaurant

Basque Kitchen by Aitor is a fine dining one Michelin star restaurant that showcases contemporary Basque cuisine reinterpreted by Chef-Patron Aitor Jeronimo Orive.

Established in October 2018 as Singapore’s first Basque-centric restaurant celebrating the country’s indigenous culture and produce, Basque Kitchen was awarded its first Michelin Star in the 2019 edition of Michelin Guide Singapore within a year of its opening.

Chef Aitor, along with his kitchen team and service staff, will play an active role in supporting Chef Connaughton and his team during the month-long residency.

Each Dining Room booking includes a multi-course dinner with beverage pairings. For some Chef-in-Residences, you may have the choice between a table in the dining room or Chef’s Counter seating, which offers an intimate and interactive experience with the chef team. Every Chef-in-Residence will embark guests on a new gastronomic adventure that is unique, innovative and inspiring.

Can we meet and greet the chef?

The SingleThread team will make every effort to be available to meet and greet guests within the guidelines and restrictions set forth by the government and local authorities.

What can we expect from the SingleThread’s menu?

During its residency at Basque Kitchen as part of the Chef Residence programme, SingleThread will be featuring the restaurant’s signature creations and incorporate Japanese ingredients into the dishes where suitable. The menu is largely influenced by the Connaughton’s time living in Hokkaido, Japan where they honed their education in farming, cooking and warm hospitality. An unmistakably Japanese ethos pervades everything they do, rooted in the concept of 'omotenashi' that delivers a heightened sense of hospitality while anticipating a guest’s every need.

There will be one menu (7- course) for lunch and dinner.

Can menus accommodate special dietaries or allergies?

We have limited ability to make substitutions for aversions, as this will compromise the integrity of the experience. Due to the special format of the menu and the unique nature of this chef residency event, dietary preferences cannot be guaranteed and the SingleThread team will make every effort to accommodate any special dietary requirements. However, we regretfully are unable to cater towards those with pure vegetarian or vegan dietary restrictions.

You must contact customer service at concierge@chefresidence.com or Basque Kitchen with any specific details at a minimum of 10 business days prior to the date of your reservation. We will unfortunately not be able to accommodate requests after this time.

What will the pricing of SingleThread’s menu be like?

The price for lunch and dinner is at $498++ (7 courses).

For reservations made online, alcoholic drinks pairing is available at an additional $298++and $318++ when purchased on premise. Non alcoholic pairing is available at $128++ for both lunch and dinner.

Menu is subjected to changes, produce and seasonal availability.

What payment methods do you accept?

We accept all major credit cards.

Please note that during the AMEX priority booking period, only The Centurion Card and Platinum Charge Card issued by American Express Singapore will be accepted. All other major credit cards will be accepted after the AMEX priority booking period has ended.

How long is the entire dining experience?

The SingleThread Experience typically lasts 2.5 – 3 hours for parties of two and can be upwards of 3-3.5 hours for larger parties.

May I bring my own wine?

This event strictly does not cater for a BYO policy and we request all guests not to bring any beverages from outside the event venue. Only food and beverage purchased from our venue is permitted.

We are delighted to offer you beautiful wine pairings carefully selected and curated by the sommeliers in conjunction with the team from Park90, to enhance the chef’s tasting menus. In addition, we have an extensive a la carte selection of wines by the bottles, from regional varietals to single-vineyard bottles to prized vintages. We also provide a selection of non-alcoholic beverages for our guests.

Where can I park my car?

Parking facilities are located at the Fullerton Hotel and One Fullerton.

Kindly check the respective venues for parking rates.

Valet Services are also available at the entrance of Basque Kitchen at $10.

While we encourage you to try our specially curated drinks pairings or select an exquisite bottle from our extensive wine list, please drink responsibly and arrange for suitable transport after the event.

Are children allowed to dine?

We welcome children 13 years and above to dine with us on the set tasting menu. Substitutions or changes to the menu are not possible and children must be fully vaccinated.

Is there a dress code?

While we encourage our guests to dress comfortably and smartly, we do ask that you do not be dressed in casual wear such as t-shirts, shorts, athletic wear, or flip-flops.

Is there a way to gain first-hand access to Chef Residence events?

With American Express as the exclusive Priority Card Partner for the Chef Residence programme, priority booking begins on 18 May for The Centurion Card Members and 20 May for Platinum Charge Card Members, on a first-come-first-served basis, and ends on 25 May. These Cards must be issued by American Express Singapore. Due to limited seating capacity, all other Card Members and the public are encouraged to register interest at https://bit.ly/SingleThreadForm from 12 May to 25 May to be on the registered waiting list. Guests who have registered interest will have access to bookings from 26 May to purchase their experience 24 hours ahead of general public release on 27 May. Bookings open from 27 May for public at https://chefresidence.com. Terms and conditions apply.

Do you accept walk-ins?

A confirmed booking will be required to dine in. Full payment prior is required to confirm and secure your reservations. We have a zero cancellation and no refund policy. Extra orders during your meal can be paid in the restaurant after your dining experience.

You may add additional guests to your table subject to availability and discretion of the restaurant.

Can customers get a refund or reschedule the booking ?

All payments for tickets purchased are fixed and final. NO refunds or changes to your booking will be allowed. We have a zero cancellation policy.

Chef Residence has a policy of no refunds, no cancellations and no amendments or rescheduling of sessions once tickets have been purchased. In the event of an exceptional situation affecting bookings due to government regulations, we will contact you directly to attempt to reschedule your reservation accordingly or facilitate a transfer of your reservation to a person of your choosing.

Will my reservation be forfeited if I am running late?

All fully paid reservations will be honored if you are running late. However, we do kindly request that you arrive on time in order to fully enjoy this unique dining experience. DOING OUR PART

We take the health and safety of our guests and employees very seriously, particularly during these unprecedented times. CHEF RESIDENCE continuously monitors and follows the latest advice from federal and local authorities to ensure proper protocols are being executed daily. The following measures have been implemented to provide the safest and most welcoming experience for each and every guest of CHEF RESIDENCE:

  • Proof of Vaccination: Upon entering, all guests will need to show proof of COVID-19 vaccination with ID in order to proceed with their CHEF RESIDENCE experience.
  • Face Coverings: All employees and guests (age 2 and over) are required to wear face coverings that fully cover the nose and mouth. Complimentary face coverings are available onsite for those who need them.
  • Sanitizing: High-touch surfaces, including vehicle and door displays, are disinfected between each guest visit and sanitizer stations are provided throughout.
  • Restrooms: Facilities are equipped with signage instructing proper hand washing technique recommended by the health authorities.
  • Extensive Training: All employees will be fully trained on the new procedures in order to assist guests at the highest level during their visit.
